Lemon Balm & Pineapple Kombucha Frappe

Lemon balm is perfect for that butterflies in your stomach feeling and is calming for those with IBS. It’s such an easy to grow herb, having similar growing habits to common mint and can be left to grow happily in a pot. As an added bonus it also has antiviral properties. This recipe combines the Lemon Balm with Ginger, Pineapple and Kombucha as a refreshing digestive summer drink.

Ingredients:

  • Half a pineapple cut up into pieces and frozen overnight.
  • 150ml Kombucha (I used my own Floral Garden Tea Kombucha)
  • 1 tablespoon of chia seeds
  • Handful of fresh lemon balm leaves (You could use common mint instead)
  • 200ml coconut water
  • 2cm piece freshly grated ginger
  • ice cubes (I left out as my blender won’t crush ice)

Method:

Place all the ingredients into a blender and mix. Enjoy

Cosmic Cookies

A good friend of mine shared these Canadian cookies with me many years ago and they are seriously delicious. I’ve played around with the original recipe using coconut sugar instead of ordinary sugar as it contains more nutrients and is naturally lower GI, butter instead of canola oil, and I added egg instead of almond milk as we have an abundance of fresh eggs here at the moment.

These cookies are energy packed making them perfect for those ravenously hungry teenagers who are always on the go, after sport, laborers, weekend warriors, or on bushwalks. While these are a healthy cookie recipe alternative to your regular cookies you should still only eat them as a treat.

Healthy Energy Cookies

I recommend freezing half so you aren’t tempted to eat them all at once :)

 

Makes 24 delicious cookies.

Ingredients:

150g unsalted butter

3/4 cup coconut sugar

1 large egg

1/4 cup black strap molasses

1/2 teaspoon cinnamon

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1//4 cup flaxseed meal

1/2 cup desiccated coconut

1/2 cup chopped dates

1 cup of dark chocolate chips / chopped chocolate or carob bits

2 cups spelt wholemeal flour

2 cups rolled oats

 

Method:

Preheat your oven to 180 degrees. Line 2 baking trays with baking paper.

Cream the butter, coconut sugar and molasses with an electronic mixer. Add your egg and mix until combined. Turn off the mixer while you add all your seeds, cinnamon, desiccated coconut, dates and dark chocolate. Mix until combined and then add your oats followed by your spelt flour. Your mixture should like the picture below.

Raw Cookie Dough

Using a spoon scoop out large bowls of mixture and roll into a ball and place on the baking tray, Lightly squash the ball of mixture with the palm of your hand.

Healthy Spelt Chocolate & Seed Cookies

Place in the oven for around 15 mins until they just start to brown. Remove from the oven and allow to cook. These taste amazing warm as the chocolate is still gooey :)

I run through a comprehensive pregnancy case history with all my pregnancy clients before their initial treatment. I allow extra time at my followups to run through any concerns or changes a mother might be experiencing. This not only helps me identify any potential risks but also helps me to individualise all my treatments so that I can tailor the treatment for the mother.

I have a specialised pregnancy massage table that allows mothers to lie face down while the baby is safely held in a sling. Natural Home Remedy for Colds & Flu

A simple home remedy tea for your cold or flu that will hydrate you, soothe your throat and help boost your body’s natural defenses. Warm teas help to liquefy mucous and relieve congested noses. For children dilute this tea 1/4 cup of tea with 3/4 cup with water. 

Flu Brew

Ingredients:

500 ml boiled water

3 cloves of garlic, chopped finely

2.5 cm of fresh ginger grated

1/4 teaspoon cayenne pepper

1 lemon, juiced

Honey to taste

Method:

Add the garlic, ginger and cayenne to the boiled water in a teapot and leave for 10 minutes. After 10 minutes add the juice of 1 lemon and some honey to taste (preferably locally sourced).

Chocolate Coconut Rough Slice

My Gran is famous for her biscuits and slices and her morning tea and afternoon tea is legendary. Homemade biscuits, sponges and slices are served on beautiful platters, some of the pottery she made herself embellished with pottery gum nuts and gum leaves. Her Monte Carlos have homemade jam from homegrown raspberries oozing out delicately between the perfectly browned biscuits. Morning tea is not just a snack, it’s a delightful regal experience.

This Coconut Chocolate Rough Slice is my own version of Gran’s. This recipe is gluten free, dairy free and vegan friendly and would make a lovely gift for family and friends.

Ingredients:

For the base:

1/2 cup dates

1 1/2 cups desiccated coconut

1 cup almonds (can use almond meal if you don’t have a powerful food processor)

1/2 cup of maple syrup

1/2 teaspoon vanilla extract

2 tablespoons raw cocoa powder

2 tablespoons coconut oil

Topping:

1/2 cup melted coconut oil (my cup wasn’t completely full)

2 tablespoons raw cocoa powder

1 tablespoon of maple syrup (add more for a sweetness if needed)

 

Method:

Place dates and almonds in a food processor and pulse until the almonds are a meal consistency. Then add the remainder of your base ingredients and pulse until it’s well combined. Press into a small slice tin. Place in the fridge while you prepare topping.

If you don’t have a powerful food processor chop up the dates as finely as you can and combine with 1 cup of almond meal. Add desiccated coconut, vanilla extract and raw cocoa powder. Melt the coconut oil in a saucepan and combine with other ingredients. Mix well and then press into the slice tin with your hands or the back of a spoon. Place in the fridge

For the topping melt the coconut oil in a small saucepan. Once melted set to the side to cool for a few minutes before adding the cocoa powder and maple syrup. Pour evenly over the base and then leave in the fridge. Just before the top hardens completely sprinkle with desiccated coconut. Once the top has hardened the slice can be cut into small squares.

Remember that while this is a healthy alternative it should still be enjoyed in moderation as hard as that may be.

The New Chicken Coop

When I asked my Dad and husband to build a chicken coop  I never could have imagined the end result. I love it and I think the chickens do to.

A joke about painting the chicken nesting boxes different colours sparked my imagination and turned into a painting afternoon for the kids. Little miss 4 year old was delighted that the chickens now had coloured nesting boxes.

The side of the chicken coop lifts up so the chickens can come and go throughout the day. This feature also makes cleaning easier as I can just rake all the straw and mess straight into a wheelbarrow which fits perfectly under the coop. I then take the wheelbarrow and empty it straight into my veggie garden.

Chickens that are free to roam and feed on pastures, bugs and worms lay eggs that have a higher ratio of Omega 3 essential fatty acids in comparison to chickens fed solely a grain based diet. You can add some flax to your chickens diet to increase the Omega 3 content of your eggs.

 

 

 

Breastfeeding Education Class in Coffs Harbour

Like many first time Mums I was so focused on the birth of my baby that I completely overlooked breastfeeding. I highly recommend the Australian Breastfeeding classes which provide the most up-to-date research based information on breastfeeding. It’s difficult as a new parent when you are overwhelmed and are receiving conflicting advice. The classes are practical and informative so you will be confident in looking after your new baby.

Sunday Breakfast at Split Sawtell

I wish I could wake up with the same bursting energy and joy for life like my kids do. One of our favourite cafes around Coffs Harbour is Split Cafe & Espresso Bar in Sawtell. I don’t drink Coffee but I’m married to a serial coffee drinker who claims that the Coffee at Split is one the best in Coffs Harbour.

I’m a little bit stubborn when it comes to ordering as I tend to get the same brekky everytime I go to Split. It tastes so good that I’m afraid of trying anything different in fear that I will regret my all time favourite. The Quinoa Tabouli with fetta and an optional poached eggs is my idea of perfection when eating out for breakfast. After brekky we took a drive up to the headland as the view is always breath taking. I’ve never seen this many surfers here before but with a perfect day like today who could accuse any of them for neglecting their lawns.
